Join TILL Kitchen and Fontanafredda Wines for an evening at our chef's counter enjoying a four course meal while enjoying an expert from Taub Family Selections discussing each coursed wine as our chefs prepare scratch dishes.

The many years of history and experience have gifted us a unique style, typical and sustainable. Our production philosophy is based on:

Using indigenous yeasts selected in our vineyards;
Letting the grape musts ferment in concreteand steel vats;
Aging the wines in large oak barrels;
Significantly reducing the use of sulfites, over 40% fewer than what is allowed by law.

We believe that what is on the outside is also quite important: we use bottles made of as much as 85% of recycled glass while both the labels and boxes carry the FSC logo. This logo guarantees that only recycled materials or materials originating from correctly-managed forests are used in their production.

Only grapes of “controlled” origin are used at Fontanafredda. The estate vineyards, managed directly by our own technicians, cover a total of about 100 hectares (247 acres), cultivated mainly with Nebbiolo, Barbera, Dolcetto, and Moscato: the typical varieties of the Langhe. This production only satisfies 20% of the business’s yearly needs. Therefore, each year, during harvest, over four hundred local vine growers deliver their own grapes to Fontanafredda, respecting generations-old fiduciary relationships. These grapes are also grown according to the firm guidelines of Vino Libero which guarantee zero chemical residues. Thanks to these additional grapes, the company annually crushes about 6 million kilograms of grapes.
